There’s nothing better than homemade banana bread and now you can have it without blowing your macro profile and get some vegetables in while you’re at it without even noticing. This is a great pre workout snack, post workout treat, dessert or all of the above!
1 ripe banana
1 medium zucchini/ 1 cup shredded
1/3 cup applesauce
1/4 cup pumpkin puree
1/2 cup oats
1 cup all purpose flour
1/2 cup chocolate chips
1 tsp baking powder
1 tsp salt
Preheat oven to 350 and grease a loaf pan with cooking spray.
Stir together flour, cinnamon, salt and baking powder in a medium bowl.
In a separate bowl, mash banana and add applesauce and pumpkin.
Add banana mixture to the dry ingredients and stir until just blended.
Fold in zucchini, followed by chocolate chips.
Scoop mixture into the loaf pan and smooth. Bake for 45 minutes.
